Belle’s Attic Smash Tacos

Makes 6 · About 20 minutes

Ingredients

  • 1 lb ground beef
  • 6 small flour tortillas
  • 6 slices American or cheddar cheese
  • Salt and pepper
  • Shredded lettuce
  • Dill pickles, sliced
  • Guacamole
  • Burger sauce

Equipment

  • Cast iron pan
  • Spatula
  • Cutting board

Method

  1. Roll the beef into 6 even balls.
  2. Set a ball on a tortilla and press it out into a thin layer, almost to the edge.
  3. Season the meat side with salt and pepper.
  4. Heat a cast iron pan over medium-high. Lay the tortilla in meat side down and press it flat with a spatula. Cook 2–3 minutes, until the beef is deeply browned.
  5. Flip. Lay a slice of cheese on the beef and let the tortilla crisp 1–2 minutes.
  6. Move it to a board and top with lettuce, pickles, guacamole and burger sauce.
  7. Fold in half and toast both sides until crisp.
