Belle’s Attic Cucumber Shaker Salad

Serves 1–2 · About 10 minutes

Ingredients

  • 1 large English cucumber
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 garlic clove, grated
  • 1 tsp sugar
  • 1 tbsp chili oil or chili crisp
  • 1 green onion, sliced
  • 1 tbsp toasted sesame seeds
  • Pinch of MSG (optional)

Equipment

  • Mandoline, with its guard
  • Jar with a lid
  • Grater

Method

  1. Slice the cucumber thin on a mandoline, straight into a jar with a lid. Mind your fingers and use the guard.
  2. Add the soy sauce, fish sauce, rice vinegar and sesame oil.
  3. Add the garlic, sugar, chili oil and green onion.
  4. Put the lid on and shake hard for about 30 seconds.
  5. Top with sesame seeds.
  6. Eat right away for the most crunch, or chill up to 2 hours for a softer, deeper flavour.
