Belle’s Pink Cloud Bread

Makes 1 small loaf · About 35 minutes

Ingredients

  • 3 egg whites, room temperature
  • 30 g (2 tbsp + 2 tsp) sugar
  • 10 g (1 tbsp + 1 tsp) cornstarch
  • Pinch of salt
  • A drop of pink food colouring (optional)
  • A splash of vanilla (optional)

Equipment

  • Baking tray
  • Parchment
  • Clean, grease-free bowl
  • Whisk

Method

  1. Heat the oven to 150°C / 300°F and line a tray with parchment.
  2. In a clean, grease-free bowl, whisk the whites with the salt until foamy.
  3. Add the cornstarch, and the colouring and vanilla if using.
  4. Add the sugar a spoonful at a time, whisking until it holds stiff, glossy peaks.
  5. Shape it into a cloud on the tray.
  6. Bake 25–26 minutes. Cool a few minutes, then tear it open.

It is more soufflé than bread: light, airy and gently sweet.
