Belle’s Cheesy Pull-Apart Garlic Bread

Belle roasts a head of garlic until it is soft as butter and mashes it into parsley butter for the loaf.

  • Makes 1 loaf
  • Bake 35–40 min at 350°F (180°C)
A painted golden pull-apart garlic bread loaf with bright green herb butter in its folds and melted cheese stretching from a pulled-away piece, on a round wooden board beside a roasted garlic bulb and a single clove, on a blue checked cloth with steam rising.

Ingredients

You’ll want7x3.4 in loaf pan, small pot, whisk, mixing bowl, rolling pin, knife, pastry brush and foil.

Method

  1. Roast: Cut the top off the garlic, drizzle with oil, wrap in foil and roast at 350°F (180°C) 45-60 min, till soft as butter.
  2. Paste: Whisk the flour and milk over medium heat till thick like pudding. Cool. This keeps the bread soft for days.
  3. Dough: Knead the flour, sugar, salt, yeast, paste, milk, cream cheese and egg 10 min. Knead in the butter till smooth. Rise 1.5-2 h, till doubled.
  4. Butter: Mash the roasted garlic into the butter with the parsley and salt.
  5. Stack: Roll to 12x12 in, spread the butter, add the mozzarella, cut 12 squares and stand them in the pan. Rise 30-45 min.
  6. Bake: Brush with egg wash, add more cheese and bake 35-40 min till deep golden. Then pull.
