Belle’s Crunchy-Top Apple Crumble
Ingredients
- Filling: 2 tart baking apples (Granny Smith or Bramley) + 2 sweet eating apples, peeled, cored and diced
- 1/4 cup (50 g) light brown sugar
- 1 tsp ground cinnamon
- 1 Tbsp butter
- Topping: 2/3 cup (150 g) cold salted butter, cubed
- 1 1/2 cups (180 g) all-purpose flour
- 1/3 cup (75 g) golden caster sugar
- 1/4 cup (50 g) light brown sugar
- To serve: warm vanilla custard or heavy cream
Equipment
- Pot
- 8-inch baking dish
- Mixing bowl
Method
- Pre-cook: Melt the butter in a pot over medium heat. Add the apples, brown sugar and cinnamon. Sauté 4-5 min, till just tender and glazed, not mushy.
- Transfer: Spread the warm apples evenly in the baking dish.
- Crumble: Mix the flour and both sugars, add the cold butter, and rub with your fingertips into big, uneven, shortbread-like clumps.
- Assemble: Scatter the clumps over the apples, leaving a rugged top for crunch.
- Bake: 25 min at 375°F (180°C fan), till deep golden and the juices bubble at the edges.
- Rest & serve: Rest 10 min to set, then spoon into bowls with warm vanilla custard.
